Random Recipes with Eli: Million Dollar Chicken Casserole

We are back with another random recipe to try! This time we thought we would try a family friendly dish and who doesn't love a savory chicken casserole? This creamy recipe was provided to us by our good friend Amber and we were excited to see if the kids would like it. But first here is what you are going to need.
Ingredients:
5 cups of rotisserie chicken
1 can of cream of chicken
1 cup of cottage cheese
1/2 cup of sour cream
4 ounces of cream cheese, room temp
1 cup yellow onion, chopped
1 1/2 teaspoon creole seasoning
1/2 teaspoon onion powder
1 teaspoon of garlic powder, divided
1 table spoon of chopped fresh Parsley (smells so good)
30 buttery Ritz Crackers, crushed
4 tablespoons of butter, melted
1 cup shredded mozzarella cheese
Optional: 1 teaspoon sliced scallions

Directions:
First Preheat your oven to 350 degrees. In a large bowl mix together your chicken soup, sour cream, cream cheese, chopped onion, creole seasoning, and Onion powder and Garlic powder until well blended. Then add the shredded rotisserie chicken and fresh chopped parsley.

In a separate bowl Mix together Crushed ritz crackers, garlic powder and melted butter. Spoon the chicken Mixture into a 9-inch square baking dish and then top with a layer of mozzarella and the crackers and butter mixture.

Bake for 35 Minutes or until golden brown. Optional: top with scallions!
The good: it was rich, creamy, and downright comforting. This dish brings together shredded chicken, cream cheese, sour cream, and shredded cheese in a way that feels indulgent but still easy enough for a busy weeknight. It’s topped with buttery Ritz cracker crumbs that add the perfect crunch to every bite.
The Bad: Our kids wouldn't touch it!
Although it didn't seem to fly well with my kids I highly recommend giving it a try—especially on a night when you want something warm, filling, and guaranteed to impress.
